Any time a day I can snack on raw cookies. Raw. Vegan. AND extremely delicious. Even your non vegan friends will like it. Just tell ’em it’s a brownie, they’ll eat it –> and LOVE it!
As I said I can eat these any time of the day. Sometimes I even crumble them over my breakfast bowls or banana ice-cream – omg they are even super versatile.. amazing…. 😉
I won’t let you wait any longer: Here’s the recipe!
- 10 to 12 medjool dates (stones removed)
- 3 tbsp almond flour
- 1 tbsp coconut flour
- 1 big tbsp coconutoil
- 1-2 tbsp raw cacao powder
- a small hand full of raw cacao nibs (if crunch is desired, I really recommend adding them!)
- pinch of Himalayan salt
- Optional: 1 – 2 tsp vanilla powder
Blend everything together until it forms a nice mixture. Finally add in some raw cacao nibs and blend for a short while again. Then roll it into one long, tight cylinder (depends on how big you want your cookies). You can do this using a baking sheet. Then cut it into pieces of about 1 cm wide. If you feel like the mixture is too soft to cut, place it in the fridge for about a minute of 5 – 10, so that the coconut oil can get firm again, which makes it easier to cut! Top it of with some shredded coconut if desired and they are ready! Store them in de fridge, about two weeks should be possible! Yum, enjoy!
